Manufacturing Process

A water-water process is an economical way to ferment food. It requires the use of a water-water mix, which can be created at home with the help of a fermentation jug or water-water bottle. A water-water process is not limited to the use of micro-organisms. There are also several companies that provide food fermenting equipment and recipes, in order to create the taste and aroma of different types of food using this kind of process.


The basic design of the fermentor depends on how much of the food to be fermented will be used. The quantity of food can be determined by measuring the water percentage in the water-water mix. This in turn will determine the size of the fermenter. The weight of the fermenter determines the amount of food that can be put in it. There are many types of fermenters on the market, but the most popular are the ones that are made from plastic, stainless steel, and glass.


A glass fermenter has a much higher capacity compared to those made from plastic or stainless steel. The glass fermenter can allow more air to enter the tank as well as remain cooler in summer months. In order to control the level of humidity, it is better to choose a glass fermenter because the fermentation can reach its peak condition when humidity is at its highest. They are usually provided with a stopper which can allow for easy pouring of the ferment. It is advisable to keep the temperature of the water-water mix constant.
